On August 4th,2001, the Clayton Farmer's Market hosted the festival, featuring heirloom tomatoes grown on plants derived from hand-me-down seed varieties rather than commercially created hybrids.. Amateur contestants brought dishes to be judged...the following are some of the winning entries.. Susan White $100 1st place
2 Tbsp butter, melted in a large skillet
1 large onion, diced
3 cloves garlic, minced..
sauté for 5 minutes until soft , cool in bowl...
2 lb assorted cherry tomatoes ...in a large bowl. Toss with
1/3 cup flour
1 1/2 tsp sugar
1 1/2 tsp salt
1/2 cup chopped basil
pinch freshly ground pepper
add cooled onion mixture , mix..
toss in 1 1/2 cups [6 oz] Provel cheese..
place in a 9 to 10 " deep dish glass pie plate or a 2 qt. baking dish..
1 unbaked refrigerated single crust pastry...fit over top of dish, tucking edges to seal...cut 3 or 4 small slits in crust and make a decorative edge..
in a small bowl mix 1 egg and 1 tsp. water and brush on crust..
Bake at 375 degrees about 50 minutes until crust is golden and filling is bubbling. Let cool before serving
you can use a combination of cherry tomatoes and the small yellow pear tomatoes, I would cut in half rather than leave whole..
Provel Cheese is widely available in the Midwest and may have to be purchased at an Italian Market..
also add a grating of fresh nutmeg to the mixture when adding the cheese...
