    Irma Farina wins last week's Pasta House Gift Certificate for her entry in the Blue Ribbon Cook contest, sponsored by the local St. Louis County Journal...the patties can be frozen after baking and reheated. They would also work as a side dish...I would add about 1/3 cup of grated carrot to the cooked carrot to give it a bit of crunch 1 egg. Beat in bowl, add..
    1/4 cup mayo
    1/2 cup finely chopped onion
    2 Tab. oil
    pinch of salt and pepper
    grating of fresh nutmeg [carol's add.]
    1 1/2 cups cooked carrots [about 1 lb.]

    mix thoroughly and add 2 cups soft bread crumbs,
    form into 10 or 12 patties

    coat with 1 1/2 cups crushed cornflakes..
    arrange on greased baking sheet..

    Bake at 375 degrees for 25 minutes, until slightly browned...
