Curried Red Beans

2 cups small red beans
2 teaspoons salt
3 tablespoons chopped, canned, green chilies
1 teaspoon tamarind concentrate
3 tablespoons oil
3/4 teaspoon whole cumin seed
1/2 cup chopped onion
1/2 teaspoon grated fresh ginger
2 teaspoons Indian curry spice mix (curry powder)
pinch cayenne pepper
1/2 cup chopped, canned tomatoes
Recipe
Combine red beans, salt, and water to cover in a saucepan. Bring to a boil, reduce heat, and simmer, covered, until beans are soft, about 1-1/2 hours. Check beans every 30 minutes or so and add more water if necessary.
When beans are soft, add chopped chilies and tamarind concentrate (dissolved in a small amount of hot water).
Heat oil in a small skillet. Add cumin seed, onion, ginger, curry powder, cayenne, and tomatoes. Cook, stirring, for 5 minutes. Add to red beans and cook for another 20 minutes. Taste for seasoning. Serves 6 to 8.
