    Greek Stuffed Florina Peppers

    Vegan recipy.

    List of Ingredients

    12 large red florina peppers(pimientos)
    1 kg eggplant
    2 large onions grated
    1 cup olive oil
    1/3 cup carolina rice
    1/2 cup finely chopped parsley
    1 kg ripe tomatoes peeled,pressed and sieved
    35 g pine nuts
    salt and pepper.

    Recipe

    Chop the eggplants, without peeling them into slices, then stripes and finally small cubes. Place the cubes in salty water and let stand for 1 hour. Rinse and drain thoroughly between your hands to remove excess liquid. Heat half of the oil in a sauce pan and saute the eggplanta. Saute the onion in the remaining oil, add tomatoes and simmer until soft. Add the parsley,rice,eggplant,pine nuts,salt and pepper. Cut off the top of each pepper and remove the seeds. Fry lightly, fill with the eggplant mixture and arrange in an ovenproof dish. Add 1/3cup water and bake at 180c until golden and soft. The peppers are equally delicious hot or cold.
