We usually have 'vegetarian meals' one or two nights a week. We had this tonight (had to eat early as my husband had an early meeting to attend). I'm sure this recipe - or a variation of it is on the boards here at least somewhere... but we love it.
In large bowl place:
1-1/2 pounds tomatoes, seeded, cubed (wonderful when fresh from the garden are in - but if you're hungry ... those 'off the vine' in the market work great!
8 - 10 ounces FRESH mozarella - cut into small cubes
1/2 to 2/3 cup fresh basil, chopped
If you have fresh Italian parsley, thyme or tarragon or oregano - put a couple of tablespoons of these in also.
Salt and freshly ground black pepper
1 teaspoon crushed red pepper
Let this stand.
Meanwhile - cook 12 ounces penne or your favorite pasta in boiling, salted water just until done.
Also heat (in small skillet or saucepan) 1/2 cup good quality olive oil until very hot - almost to 'smoke' point.
Pour hot hoil over tomato mixture.
Drain pasta; add to tomatoes; toss to mix well. Cover with foil and let stand 2 - 3 minutes. toss again and serve.
