    Vegeatbles with Tofu Sauce

    List of Ingredients




    1 cup vegetable stock
    2 tablespoons soy sauce
    1 tablespoon salt
    1 cup carrots, peeled and cut in thin julienne
    1 cup turnips, peeled and cut in thin julienne
    1/2 bunch broccoli, cut in bite-sized pieces
    1/2 (10-oz.) package fresh spinach, cleaned and stemmed
    1/2 cup sliced bamboo shoots
    1-1/2 cups sliced mushrooms

    Tofu Sauce:

    1/2 block tofu
    3 tablespoons light miso
    1 tablespoon sugar
    2 tablespoons toasted sesame seeds

    Recipe



    Bring stock, soy sauce, sugar, and salt to a boil in a large saucepan. Add carrots and turnips and cook 3 minutes. Add remaining vegetables, cover, and cook 3 to 5 minutes, until tender. Drain and cool. Reserve stock for soup.
    Mix vegeatbles with tofu sauce (see below) and taste for seasonong. Serve cold or at room temperature.

    Tofu Sauce:
    Press out excess water from tofu. Mash and mix with remaining ingredients. Toss with vegetables.
