George's Tomato Sauce with Shrimp

List of Ingredients
2 lb Fresh tomatoes
2 tb Olive oil
1 1/2 lb Medium shrimp, shelled and deveined
1 1/2 c Sliced Peperoni
1 lg Diced onion
½ ts Minced garlic
½ ts Oregano, crushed
½ cUP Dry white wine
¾ ts Salt
¼ ts tsp Ground black pepper
1 tb Dry basil
4 tb Nuts (chopped)

DIRECTIONS
Use tomatoes held at room temperature until fully ripe. Core tomatoes; chop (makes about 5 cups); set aside. In a large skillet over medium-high heat, heat oil. 2 Add Shrimp, onion, garlic and oregano; cook, stirring occasionally, until shrimp is just pink, about 3 minutes. 3 Add reserved tomatoes, wine, salt and pepper. Cook until tomatoes are heated through, 2 minutes longer. Remove from heat; stir in basil and pine nuts. 4 Serrve over hot pasta or white cannelloni beans, if desired.
