500g Beef Mince
500g floury potatoes
1 large onion, roughly chopped
250g mature cheddar, grated
salt & pepper Recipe
Peel the potatoes and then thinly slice.
In a bowl, mix the mince with the onions and cheese, add pepper to taste, adjust the amount of salt according to the strength of the cheese.
In a baking dish, place a layer of potatoes in the bottom, then layer some of the mince mix on top. When putting the mince into the dish, do not try to make it a "solid" layer, it should be broken and rustic.
On top of the mince, layer more potatoes and continue layering finishing with potatoes on top.
Sprinkle the top with a little more grated cheese and cover with a lid or foil.
Bake in a moderate oven (170 deg) for 2 hours or untill the potatoes are cooked through, the lid should be removed for the last half hour of cooking.
I serve this with just cabbage keeping it very simple, pure comfort food.
