Fillet Steak with Spring Onion Sauce

List of Ingredients
• Olive oil
• 1 bunch spring onions
• 2 cloves garlic, finely chopped
• 100ml (7floz) beef stock
• 100ml (7floz) white wine
• 50g (2oz) butter
• 1 x fillet steakRecipe
For the spring onion sauce -
• Pour the wine and stock into a small saucepan and simmer until reduced by half.
• Take half of the spring onions and finely chop.
• Pre-heat a frying pan and add some oil and a little of the butter.
• Add in the spring onions with half of the garlic and sauté until soft.
• Add in the reduced wine and stock and simmer for 1 minute.
• Add the rest of the butter and whisk to combine.
For the steak –
• Take the remaining spring onions and cut into batons.
• Pre-heat a frying pan and add the oil.
• Add in the onions and remaining garlic and fry until golden – remove from the pan and set to one side.
• Add in the remaining oil and the butter.
• When foaming add in the steak, cook to your liking. Then remove from the pan and rest.
TO SERVE:
• Cut the steak in half and place one half on a plate, top with the sautéed spring onions then place the other half of steak on top. Drizzle with sauce.
