Fillet Steak with Spring Onion Sauce

List of Ingredients
� Olive oil
� 1 bunch spring onions
� 2 cloves garlic, finely chopped
� 100ml (7floz) beef stock
� 100ml (7floz) white wine
� 50g (2oz) butter
� 1 x fillet steakRecipe
For the spring onion sauce -
� Pour the wine and stock into a small saucepan and simmer until reduced by half.
� Take half of the spring onions and finely chop.
� Pre-heat a frying pan and add some oil and a little of the butter.
� Add in the spring onions with half of the garlic and saut� until soft.
� Add in the reduced wine and stock and simmer for 1 minute.
� Add the rest of the butter and whisk to combine.
For the steak �
� Take the remaining spring onions and cut into batons.
� Pre-heat a frying pan and add the oil.
� Add in the onions and remaining garlic and fry until golden � remove from the pan and set to one side.
� Add in the remaining oil and the butter.
� When foaming add in the steak, cook to your liking. Then remove from the pan and rest.
TO SERVE:
� Cut the steak in half and place one half on a plate, top with the saut�ed spring onions then place the other half of steak on top. Drizzle with sauce.
