� 1 chicken breast
� some Sage leaves
� 2 slices of Parma Ham
� Flour seasoned with salt and pepper
� Butter
� Olive oil
� Lemon, slicedRecipe
o Beat the chicken breast out flat to form an escalope. Place 2 sage leaves on the escalope, and top it with a thin slice of Parma Ham.
o Dip both sides of the escalope in seasoned flour and dust off any excess.
o Heat a knob of butter and a good slurp of olive oil in a large frying pan.
o Seal the chicken for 1-2 minutes each side, remove and keep warm.
o Add a further 25g butter and some slices of lemon and shredded sage. Cook until lemons are brown.
o Spoon butter, sage and lemon over the escalope.
o Serve with broccoli.
