Chicken, Sweetcorn and Onion Fritters

List of Ingredients
• 1 large eggs
• 100g self-raising flour
• 4 tablespoons sour cream
• 200g cooked chicken, torn into small strips
• 150g cooked sweetcorn
• 4 spring onions, thinly sliced
• Sea salt and freshly ground black pepper
• Olive oil for frying
To serve
• Sour cream/guacamole
• Sweet chilli dipping sauce
• Lime wedge
Recipe
• Lightly beat the eggs, and then add the flour and sour cream so you have a thick batter. Stir in the chicken, sweetcorn, spring onion and season with salt and pepper.
• Heat a tablespoon of olive oil in a frying pan over a low-medium heat. Place tablespoons of the mixture into the pan and press down to form flat fritters. Cook for a couple of minutes until they are golden, and then turn over and cook until the bases are also golden. Repeat with the remaining mixture, adding more oil as you go.
• Serve with some sour cream, guacamole, sweet chilli sauce and lime wedges to squeeze over.
