    90ml (6tbsp) strong black coffee

    60ml (4tbsp) raisins

    45ml (3tbsp) brandy or rum

    50g (1 3/4oz) caster sugar

    1 x 250g tub Somerfield ricotta cheese

    1 x 142ml carton Somerfield double cream

    50g (1 3/4oz) Somerfield So Good dark chocolate, grated

    Recipe



    In a small bowl, mix together 45ml (3tbsp) coffee, the raisins, brandy or rum and sugar. Stir well and leave for 30–45 minutes.

    Beat the ricotta cheese lightly just to soften it, then gradually beat in the raisins and the sweet coffee mix.

    Whip the cream into soft peaks and fold into the ricotta with half the grated chocolate. Spoon into four glasses, drizzle over the remaining coffee and sprinkle with the rest of the chocolate.

    Chill until ready to serve – and for a maximum of three hours. Dust with icing sugar, if desired, before serving.
