Spicy Aubergine Relish with Pitta Bread

A sweet and spicy relish that can be served as a starter or as part of a meze platter. Enjoy with plenty of warm pitta bread.

1 tsp olive oil
1 red onion, finely chopped
2 aubergines, trimmed and diced
4-5 Waitrose Classic Vine Tomatoes, diced
2 courgettes, diced
3-4 tsp Bart Ras El Hanout Moroccan Style Spice Mix with Rose Petals, to taste
3 tbsp white wine vinegar
50g sugar
½ x 20g pack fresh flat-leaf parsley, roughly chopped
To serve
2 packs Waitrose Picnic Pittas
110g pack Waitrose Leafy Salad with MustardRecipe
Instructions
Heat the oil in a large, non-stick frying pan and cook the onion and aubergine on a medium heat for 5 minutes, stirring often, until they soften slightly.
Add the tomatoes, increase the heat and cook for a further 5 minutes.
Add the remaining ingredients except the parsley and cook for 20 minutes, stirring occasionally, until all the vegetables are tender. Season to taste then leave to cool.
Sprinkle the parsley over the relish and serve with warmed pitta bread and Waitrose Leafy Salad with Mustard.

This relish is great with cheese, such as Ossau Iraty, from the cheese service counter.
