    Beer Battered Fish & Chips

    List of Ingredients




    • 225g / 8oz plain flour
    • 1/2 pint brown ale
    • 1 egg yolk
    • 1tbsp oil
    • 110ml / 4fl oz water
    • Pinch of salt
    • 4 x 175g / 6oz fillet of cod (no skin, no bone)
    • Oil to fry
    • 4 large potatoes
    • Oil to fry

    Recipe



    • To make the batter sieve the flour and salt into a large mixing bowl
    • Add the egg yolk and brown ale then beat smooth
    • Add the oil and water and beat to the required consistency
    • Then heat the oil in a chip pan or deep fat fryer to 150°c
    • Peel, wash and dry the potatoes
    • Cut the potatoes into large chips
    • Put the chips into the oil to deep fry to cook, but not to colour
    • Take the chips out and drain on paper
    • Now heat the oil to 180°c
    • Dip the fish in batter and then fry in oil
    • Cook in the oil and turn over to colour
    • Then take the fish out and leave to drain on paper (you can keep the fish warm in the oven whilst you re-cook the chips)
    • Now turn oil up to 200°c and put chips back in to colour,
    • Drain and serve with the fish.

    Tip…
    • If you are making fish and chips for lots of people at home here are a few tips to help keep everything warm to serve at once.
    • For the chips blanche the them in advance. Then cook the fish (small pieces is a good idea). Once the fish is cooked keep it warm (on draining paper) in a warm oven whilst you refry the blanched chips to colour them.
