    List of Ingredients




    • 2oz / 58g butter
    • 6oz / 170g caster sugar
    • 2 eggs, separated
    • 2 ½ oz / 70g Self-raising flour
    • Grated zest and juice of 2 lemons
    • 10 fl oz / 285ml milk

    Recipe



    • Grease a glass pyrex bowl or ovenproof dish.
    • In a large bowl beat together the butter and sugar until pale and creamy
    • Then add the egg yolks, flour, grated zest and juice of 2 lemons and the milk. Don't worry if it looks curdled.
    • Whisk the egg whites together until they form soft peaks and fold gently into the lemon mixture.
    • Pour the mixture into the dish and place in the microwave.
    • Cook on full power for approximately 5 minutes (cooking times may vary according to your microwave power rating).
    • Leave to stand for 1 minute before serving.

    Serves: 4
