    Steamed Pudding with Toffee Sauce

    List of Ingredients

    For the sponge:
    • 100g (4oz) self raising flour
    • pinch baking powder
    • 75g(3oz) caster sugar
    • 1 egg
    • 1 tbsp golden syrup
    • 100ml (4floz) milk
    • 75ml (3floz) sunflower oil or melted butter
    • rind of 1 lemon

    For the sauce:
    • 1/4pt double cream
    • 15 Cadbury’s chocolate éclairs

    Recipe

    • Mix all the sponge ingredients in a mixing bowl till smooth.
    • Oil 5 x (200ml) teacups or individual microwave proof pudding basins and line the base with a circle of greaseproof paper.
    • Divide the mixture between them & place in the microwave and cook on medium power (for a 1000 watt microwave) for 3 and a half minutes. The mixture will be firm to the touch but still look a little wet on top.
    • Allow to cool for 3 minutes before turning out.
    • Melt the chocolate éclairs in the cream over a low heat and stir until smooth, and pour over the puddings.

    Serves: 6
    Preparation Time: 10 minutes
    Cooking Time: 30 minutes
