Ham and cheese croquettes

450g (1lb) left-over cooked potato, mashed
175g (6oz) ham, cubed
100g (3 1/2 oz) Somerfield Mature Cheddar Cheese, grated
15ml (1 tbsp) fresh parsley, finely chopped
Flour
1 Somerfield Egg, beaten
breadcrumbs for coating
Somerfield Sunflower Oil for frying
Peas or broccoli for serving
Recipe
Mix together the potato, ham, cheese and parsley, season to taste. Mould the mixture into 4 croquettes, pressing firmly.
Roll each croquette lightly in flour, dip in the egg, then roll in breadcrumbs.
Heat oil in a heavy-based frying pan. Gently fry the croquettes until golden on all sides. Serve with peas or broccoli.
