    Mushroom & Bacon Wraps with Tomato Salsa

    15ml (1tbsp) Somerfield olive oil
    4 slices Somerfield unsmoked rindless back bacon
    250g (9oz) Somerfield closed cup mushrooms
    1 clove garlic
    1 Little Gem lettuce
    30ml (2tbsp) Somerfield Good Intentions mayonnaise
    16 Somerfield cherry tomatoes
    1/2 small red onion
    15ml (1tbsp) fresh Somerfield parsley
    1 x 326g pack flour tortillas

    Recipe



    Slice the bacon and mushrooms. Heat the oil in a frying pan. Add the bacon, mushrooms and crushed clove of garlic. Cook gently until the mushrooms have softened and the bacon is cooked.

    Quarter the cherry tomatoes. Finely slice the onion and mix together with the chopped parsley.

    Heat the tortilla wraps in the microwave. Cover with cling film and cook on full power for 1 minute. Or wrap in silver foil and cook for 15 minutes in the oven (180°C, 350°F, gas mark 4).

    Spread the wraps with some mayonnaise. Add some torn lettuce and then the bacon and mushroom mix. Serve with the tomato salsa.
