Red Pepper & Bacon Frittata Cups

4 rashers Somerfield back bacon
1 red pepper
1 courgette
1 onion
6 Somerfield eggs
5ml (1tsp) mixed dried herbs
25g (1oz) Somerfield mature Cheddar cheese
Somerfield greaseproof paper
Recipe
Preheat oven to 200°C, 400°F, gas mark 6.
Chop bacon, red pepper, courgette and onion into small pieces. Sauté in a frying pan until softened.
Beat the eggs together with the mixed dried herbs.
If making cups, line a muffin tin with squares of greaseproof paper. Mix vegetables and eggs, spoon into greaseproof paper, sprinkle with the Cheddar and bake for about 10 minutes until set. If making in a frying pan, pour the eggs into the vegetables, stir, top with the cheese, cook for 4–5 minutes to let top set. Serve cut into wedges.
