    This is a lovely stand alone dish with a nice salad or a piece of barbecued chicken.

    List of Ingredients




    250 g risotto rice, use Carnaroli or Arborio rice
    1 litre stock of choice, I like chicken
    2 tbs olive oil
    25g butter
    1 onion
    1 tbs black mustard seeds
    Zest and juice of 1 lemon
    2 tbs grated Parmesan or Pecorino cheese
    1 tbs cream (optional)
    1 tbs dried thyme
    Salt and black pepper to taste

    Recipe



    1. In a big saucepan bring the stock to a simmer. You must always make a risotto with constantly hot stock.
    2. In a different big saucepan melt the butter and oil.
    3. Add the onion and sweat till golden.
    4. Add the mustard seeds and stir for one minute.
    5. Add the rice and stir until the rice is well covered with the oily, buttery, seedy loveliness.
    6. Add the lemon zest, juice and thyme.
    7. Add the stock a ladle full at a time and keep stirring. When absorbed add another ladle full. If you run out of stock add some water.
    8. The risotto is cooked when the rice is tender. It will take around 20-30 minutes or so. Don’t rush it.
    9. Add the cream and Parmesan, check the seasoning, you can also check the lemon taste, if you want it a bit sharper put in some more juice.
