List of Ingredients




2 egg yolks
1 whole egg
1tbsn Dijon mustard
juice of half a lemon
½tspn salt
½tspn ground black pepper
½tspn caster sugar
400ml vegetable oil

Recipe



Place everything in the food processor except the oil. Blitz for 10 seconds to combine, then pour in the oil in a very slow but steady stream.
When the oil is all in, blitz for another 10 seconds and there you have it, perfect mayonnaise.
You will never buy a jar again.

Play around with your mayonnaise, adding lemon or lime zest for a citrus mayo or garlic to make a garlic mayo as strong or subtle as you like.
