    Cheese and Chive Muffins

    List of Ingredients

    335g self raising flour
    1 1/2tbsn caster sugar
    50g butter, chopped
    60g coarsely grated parmesan cheese
    3tsp dry mustard
    20g (approx) chopped fresh chives
    1 egg
    250ml milk
    40g grated parmesan for top

    Recipe

    Grease 12 hole muffin tin (80ml capacity).
    Combine flour and sugar in bowl and rub in butter.
    Add cheese, mustard, egg, chives and milk and stir until just combined.
    Spoon into prepared tin and sprinkle with extra cheese.
    Bake in a moderate hot oven (190c) for about 20 mins.
    Turn onto wire rack.
