1/2pt milk
1 3/4lb sugar
4oz butter
2tspn vanilla essenceRecipe
Pour milk into a heavy based saucepan and slowly bring to the boil.
Add sugar and butter.
Heat slowly, stirring all of the time until sugar disolves and butter melts.
Bring to the boil, cover and boil for 2 mins.
Uncover and continue to boil steadly, stirring occasionaly for 10-15 mins until a little of the mixture dropped into cold water forms a soft ball when rolled between finger and thumb.
Remove from the heat, stir in vanilla and laeve to cool for 5 mins. Beat fudge until it just starts to loose its gloss and is thick.
Transfer into a 7" square buttered tin. Mark into squares when cool.
Cut with a sharp knife when it is hard and set.
Store in an airtight container.
