    Poached Salmon Topping

    Source of Recipe

    Eye of the Storm (me)

    Recipe Introduction

I use this topping on a number of different items to create hors d'vorse.

    List of Ingredients

1 lb skinless atlantic salmon fillet
    white wine
    2 tablespoons choped garlic
    1/4 cup chopped fresh dill
    1/4 cup chopped fresh parsley
    fresh cracked black pepper
    juice of 1 lemon
1/2 cup diced roasted red peppers
    horse radish
    16 ounces soften cream cheese
    1/4 cup small capers

    Recipe

    Poach salmon
in white wine lemon juice and black pepper to taste, (I poach stove top in a pot the salmon fits tight in on medium high heat), once boiling about 10 to 13 mins. When done, drain and allow to cool. In a mixing bowl add remaining ingredients and salmon, mix well with a spoon and refridgerate over night to allow flavers to mingle. Before using allow mixture to soften a bit on your counter. I like to use a pastry bag to pipe into cucumber cups, on crackers, garlic toast and small puff pastry. Be creative with what you top and enjoy.
