List of Ingredients
2 qts. milk, (half-gallon)
1 1/2 cups white sugar
1 cup small pearl tapioca, (can find at Asian market or "fancy" grocery store)
3 eggs
1 1/2 tsp. vanilla

*** Almost fills 7 qt. crockpot
3 qts. milk
1 1/2 + 3/4 cup white sugar
1 1/2 cups small pearl tapioca
4 1/2 eggs
1 1/2 tsp. vanillaRecipe
In 6 qt. crockpot, combine milk, sugar and tapioca pearls; Stir well to mix.
Cover and cook on high 2-5 hours.
* You're looking for tapioca to be soft and somewhat slimy. Will not be very thick, it's okay.
Then in separate bowl, mix eggs with vanilla.
Take 1/2 cup hot milk and tapioca mixture and whisk milk into egg bowl ("tempering the eggs").
Add another 1/2 cup hot milk and tapioca and whisk into eggs, too.
Then add yet another.
Pour contents into crockpot and whisk until thoroughly combined.
Cover and cook on high another 30-45 mins., or until tapioca is pudding-like in consistency.
Unplug and let sit about an hour to cool. * Will thicken as it cools.
Chill in refrigerator or eat with serving spoon, hot, right out of crockpot!
