List of Ingredients
DRESSING:
1 cup bottled red wine vinaigrette
2-3 tbsp. Cabernet sauvignon, or other red wine
Seasoned salt, a few pinches to taste
Sugar, few pinches to taste
SALAD:
1 green cabbage, cored & chopped (or 2 (10 oz. pkgs) shredded green cabbage, chopped
1/4 red cabbage, cored & chopped (or 1/2 (10 oz. pkg) shredded red cabbage, about 2 cups, chopped
3 green onions, chopped
1/2 red bell pepper, chopped
1 cup roasted, salted peanutsRecipe
To make dressing, blend together vinaigrette, wine, seasoned salt and sugar to taste. Set aside.
In large bowl, combine cabbages, green onions and red pepper, tossing well.
Add dressing to taste, being careful not to overdress, and toss until mixed.
Add peanuts and mix well.
Serve immediately or chill up to 1 hour before serving to avoid mixture becoming soggy.
NOTE: Cabbage/vegetable mixture can be mixed and refrigerated in advance, then tossed with dressing & peanuts just before serving.
