Applesauce Fruitcake
Makes one 5-pound cake; serves 20
1 cup (2 sticks) butter or vegetable shortening
2 cups granulated sugar
3 eggs, beaten
4 teaspoons baking soda
1 quart applesauce
4 cups all-purpose flour
2 teaspoons ground cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cloves
1/2 teaspoon allspice
1/2 teaspoon salt
1 cup chopped walnuts or pecans
1 cup raisins
1 cup dates, chopped
1 pint mixed candied fruit
Cream shortening and sugar; add eggs. Dissolve baking soda in
applesauce; add to the first mixture. Sift dry ingredients together;
add slowly to applesauce mixture, beating well. Stir in nuts,
raisins, chopped dates and mixed fruit. Pour into a large tube pan
that has been greased and lined with waxed paper. Bake in a preheated
300-degree oven for 1 hour and 20 minutes, or until a tester comes
out clean. Cool on a wire rack and unmold. Cool completely and wrap
well.
Tester Laura Reiley's comments: "A very moist spice cake, which only
resembles a fruitcake with its colorful bits of candied fruit. It is
easy to make and delicious served warm with ice cream or whipped
cream. It keeps nicely for days without drying out. It could be even
more special drizzled with a simple maple glaze or a lemon-flavored
confectioners' sugar glaze."
