    Banana Bread



    Ingredients:
    1-1/4 cups sugar
    1/2 cup butter or margarine, softened
    2 eggs
    1-1/2 cups mashed ripe bananas
    1/2 cup buttermilk
    1 tsp. vanilla
    2-1/2 cups all-purpose flour
    1 tsp. baking soda
    1 tsp. salt
    1 cup chopped walnuts


    Preparation:
    Preheat oven to 350 degrees. Grease a 10-inch bundt pan or one-loaf
    pan that is 9x5x3 inches. Mix sugar and margarine in a large bowl.
    Stir in eggs until well blended. Add bananas, buttermilk and vanilla.
    Beat until smooth. Stir in flour, baking soda and salt until just
    moistened, then stir in nuts. Pour into pan.


    Bake for an hour or until a toothpick inserted in the middle comes
    out clean. Cool for five minutes in the pan on a wire rack. Loosen
    sides from pan, then remove cake and place back on a wire rack. Cool
    completely before slicing.


    Yield: 2 loaves
