    Blueberry Cake

    This blueberry cake is best made with fresh blueberries, and it should be
    eaten while it's still slightly warm.

    Blueberry Cake


    1 3/4 cups flour
    5 oz butter or margarine
    dash salt
    3 egg yolks


    Filling:
    3 egg whites
    1/3 cup sugar
    1 quart fresh blueberries


    Heat the oven to 400F. Mix all ingredients for the dough, til firm and slightly crumbly. Press out the dough into a 9" springform pan, so that it covers the bottom and the sides.


    Beat the egg whites stiff. Mix sugar with blueberries and gently fold them into the egg whites. Fill the pan with this mixture and bake for about 50 minutes.
