Brown Sugar SpiceCake
Recipe Introduction
1 cup shortening (Crisco)
1 1/2 cups brown sugar
2 whole eggs and 2 egg yolks
2 and 2/3 cups sifted flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cloves
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup sour milk or buttermilk
1/2 cup chopped nuts, optional
Cream shortening and add sugar gradually. Add well-beaten eggs and the 2 egg yolks and combine. Sift flour, soda, baking powder, spices and salt together. Add to shortening mixture alternately with the milk.
Add nuts and mix well. Pour into well greased 9-by-13-inch baking dish. Top with topping (below).
Sprinkle with chopped nuts, if desired.
Bake approximately 45 minutes in a preheated 350 F.
Topping
2 egg whites
1 cup brown sugar
1/2 cup chopped nut meats
Beat egg whites with electric mixture until they hold a point. Sprinkle in brown sugar slowly, beating in til incorporated. Spread on top of cake, sprinkle with nuts and bake.
Makes 16 servings.
