Coffee Cake

1 3/4 cups shifted cake flour
4 teaspoons dry instant coffee
2 1/4 teaspoons baking powder
1/2 teaspoon salt
1/2 cup shortening
1 cup plus 2 tablespoons sugar
2 eggs
3/4 cup milk
1/2 teaspoon vanilla
Sift flour with instant coffee, baking powder and salt. Cream
shortening, add sugar gradually and cream together until light and
fluffy. Add eggs, one at a time, beating well after each addition.
Add flour. alternately with milk, beating after each addition until
smooth. Mix in vanilla. Pour batter into two greased 8-inch layer
pans and bake 25-30 minutes at 375 degrees. Frost with Rich Coffee
Frosting (recipe follows).
RICH COFFEE FROSTING:
1/2 cup butter or margarine
1/4 teaspoon vanilla
Dash of salt
5 cups (approximately) sifted powdered sugar
2 teaspoons dry instant coffee
1/4 cup hot water
Cream butter; blend in vanilla and salt. Gradually add part of sugar,
blending well. Dissolve instant coffee in hot water. Alternately add
coffee mixture and remaining sugar to creamed mixture until of
spreading consistency.
