    Cranberry Bread

    Recipe Introduction

    2 cups flour
    1/2 cup cranberries
    1 cup sugar
    1 1/2 tsp. baking powder
    1 tsp. salt
    1/2 tsp. baking soda
    3/4 cup orange juice
    1 tsp. freshly grated orange peel
    2 Tbs. salad oil
    1 egg
    1 1/4 cup chopped walnuts


    Preparation:


    Preheat oven to 350 degrees. Grease bottoms of two 7 1/2 x 3 1/2-inch
    loaf pans (or one 9x5-inch pan).


    Combine all dry ingredients in large bowl. Separately mix egg, oil,
    and juice and add dry ingredients, mixing until thoroughly combined.
    Quickly stir in berries and nuts and pour into pans. Bake for 45
    minutes (or about an hour for one loaf pan) or until toothpick
    inserted into center comes out clean.


    Remove bread from pans. Cool on a rack.


    Makes 2 (7 1/2 x 3 1/2-inch) loaves or 1 (9x5-inch) loaf.





    Creamy Orange Spread:


    Pulse 8 ounces of softened cream cheese along with 6 Tbs. orange
    marmalade (or more to taste) in food processor until combined.
