    Fat Free Carrot Cake
    Makes 20 servings.

    Vegetable spray for coating pan
    2 tsp. baking powder
    1 tsp. cinnamon
    1 cup applesauce
    1 cup granulated sugar
    grated rind and juice of 1 orange
    1 cup raisins
    3 cups cake flour
    1 tsp. baking soda
    1/2 tsp. salt
    1 cup light brown sugar
    3 egg whites
    3 cups peeled, shredded carrots

    Preheat oven to 350°. Spray bundt-style pan with Pam® spray. Combine
    flour, baking powder, baking soda, cinnamon and salt. Set aside. Beat
    together applesauce, sugars, egg whites, orange rind and juice. Blend
    in flour mixture with mixer at medium speed, beating only until smooth.
    Do not over-beat. Stir in carrots and raisins. Pour batter into
    prepared pan and bake 50-60 minutes or until a knife inserted near the
    center comes out clean.
