    Lemon Bars

    Recipe Introduction


    Lemon Bars


    For crust:
    2 cups all-purpose flour
    1 cup (2 sticks) butter
    1/2 cup powdered sugar


    For filling:
    4 eggs
    2 cups sugar
    1/2 teaspoon salt
    6 tablespoons lemon juice
    4 tablespoons all-purpose flour
    1 teaspoon baking powder


    For topping: Powdered sugar


    Preliminaries: Preheat oven to 350 degrees.


    1. Cream together first 3 ingredients (for crust).


    2. Press crust into 9-by-13-inch glass baking pan.


    3. Bake crust at 350 degrees 20 minutes. Remove from heat.


    4. Mix remaining ingredients (except powdered sugar). Pour mixture
    over crust and bake at 350 degrees 25 minutes.


    5. Sprinkle with powdered sugar while warm.


    6. Cool and cut into bars.


    Yield: 12-16 bars
