    Apple Pecan Cake

    Apple Pecan Cake


    Recipe from Betsy Kripas of Manchester, Mich.


    2 cups sugar
    1 teaspoon salt
    1 1/4 cups vegetable oil
    2 eggs
    3 cups flour
    1 1/2 teaspoons baking soda
    2 teaspoons vanilla
    1 cup chopped pecans
    3 Delicious or tart apples, peeled and chopped fine


    Preheat oven to 350 degrees. Mix together sugar, salt and vegetable
    oil. Add 2 eggs and beat well. Add flour, baking soda, vanilla and
    pecans. Add apples to batter.


    Pour into a nonstick, greased 12-cup tube pan. Bake 1 hour 15 minutes.


    Serve with ice cream or Cool Whip for a delightful treat. Serves about 8.
