    Pineapple Banana Cake
    As seen on WPTA-TV, 21Alive News at Noon and 5 PM
    November 1, 1996


    12 to 15 Servings


    3 cups all-purpose flour
    2 cups sugar
    1 teaspoon baking powder
    1 teaspoon salt
    1 teaspoon ground cinnamon
    3 medium-sized ripe bananas, diced (about 2 cups)
    1 1/2 cups vegetable oil
    1 1/2 teaspoons vanilla extract
    1 can (8 ounces) crushed pineapple, undrained
    2 eggs, lightly beaten


    12 to 15 servingsIn a large bowl, with a spoon, stir together all of
    the ingredients except the eggs. Add the eggs and stir until well
    combined. Pour the batter into a 9 x 13-inch baking dish or a 10-inch
    Bundt pan that has been coated with nonstick baking spray. Bake for
    60 to 70 minutes at 350 degrees F., or until golden.


    NOTE: Serve as is or top with whipped cream or your favorite fresh or
    thawed frozen fruit.
