    Spiced Zucchini Bread

    Recipe Introduction


    From the Sarabande Bed and Breakfast, Albuquerque,New Mexico

    3 cups flour
    1-1/2 teaspoons soda
    1/2 teaspoon baking powder
    3 teaspoons cinnamon
    1/2 teaspoon cloves
    1 teaspoon salt
    3 eggs
    2 cups sugar
    1 cup vegetable oil
    2 teaspoons vanilla
    2 cups shredded zucchini
    1 (8 oz.) can crushed pineapple, drained
    3/4 cup chopped walnuts


    Combine flour, soda, salt, baking powder, cinnamon, cloves. Set aside.


    Beat eggs lightly and add sugar, oil and vanilla. Beat until creamy.
    Stir in zucchini and pineapple. Add dry ingredients and stir until moist.
    Add nuts.


    Spoon batter into two well greased and floured 9x5x3" loaf pans. Bake 1 hour at 350 degrees. Cool 10 minutes before removing from pans.
