Cookies On a Stick
CHOCOLATE COOKIES-ON-A-STICK

1/2 pound (2 sticks) butter, soft
3/4 cup granulated sugar
3/4 cup packed light brown sugar
1 teaspoon vanilla extract
2 large eggs
1 1/2 cups all-purpose flour
1/3 cup plain cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
Decorative icing, optional
Heat oven to 350 degrees. In large mixer bowl, beat butter, white and
brown sugar, and vanilla at medium speed until creamy. Add eggs; beat
well. Stir together flour, cocoa, baking soda and salt; gradually add
to butter mixture, beating to blend well. By scant 1/4-cupfuls, drop
18 portions of dough, about 3 inches apart, on ungreased cookie
sheets. Shape into balls and insert wooden ice cream stick halfway
into center of each. Flatten slightly, forming shapes if desired,
such as broom sweep or pumpkin. Bake at 350 degrees for 10 to 12
minutes or until set. Let cool 3 minutes; carefully lift to wire rack
to cool completely. Decorate with icing as desired. Makes 18 (3
1/2-inch) cookies.
