    Spinach with Rice *

    Brown a large chopped onion in 2 Tbsp. olive oil. (should be dark brown).
    Put in a cup of water and 2 10oz. pkg. chopped spinach (can still be frozen).
    Cover and on very low heat defrost the spinach.
    Add 3/4 cup Carolina Rice
    2 cups water
    2 Tbsp. ch. dill
    4 Tbsp. ch. fresh parsley
    salt, pepper
    Continue cooking til rice is tender for 20 min. or so.
    Add more water if needed.

    Cook til rice is tender.
