Tortilla Casserole Snacks
3 soft tortillas, ripped into bite size pieces
1/2 green chili pepper, minced
1 large roma tomato, minced
1/4 cup onion, minced
1/3 green bell pepper, minced
1/3 cup fat-free grated cheese
1 egg
1/3 cup skim milk
dipping items of your choice: salsa, low-fat sour cream, guacamole, etc.
Preheat oven to 350 F
Spray a small glass baking dish with cooking spray.
Arrange 1/2 of the tortilla pieces in baking dish, covering the bottom.
Top evenly with half the chili peppers, tomato, onion, green bell peppers and cheese.
Repeat layering.
Mix together well the egg and milk, and slowly/gently/evenly pour the mixture over the tortilla dish.
Bake in oven at 350 F for 20 minutes or until a toothpick comes out clean.
Cool and slice into finger-friendly strips. Dip into bowls of salsa, low-fat sour cream, and/or guacamole to eat!
