Monterey Jack Casserole
List of Ingredients
- 1 lb ground beef
- 1 Tablespoon instant minced onion
- 1 8oz package of corn chips, crushed
- 1 15oz can mild enchilada sauce
- 1-1/2 cups shredded monerey jack cheese
- sour cream , optional
Instructions
- Preheat oven to 350 degrees. Brown beef and onion together. Drain excess fat. Place 2 cups crushed corn chips in bottom of 1-1/2 quart dish. Layer beef over chips. Pour enchilada sauce over beef. Top with cheese. Bake 20-30 minutes or until bubbly and heated through. Sprinkle with remaining chips. Bake an additional 5 minutes. Top individual servings with sour cream if desired. 4 servings
