    Basil Tortellini Soup

    4-1/2 cups broth (chicken, vegetable or beef)
    1 package (9 ounces) refrigerated cheese tortellini
    1 can (15 ounces) white kidney or cannellini beans, rinsed and drained
    1 cup chopped fresh tomato (or a 14-ounce can diced tomatoes, drained)
    1 tablespoon dried basil
    1 to 2 Tablespoons balsamic vinegar
    1/4 teaspoon salt
    1/8 to 1/4 teaspoon pepper
    1/3 cup shredded Parmesan cheese

    To assemble: just pour all of the ingredients into a container and freeze.

    To cook: Thaw completely. Bring to a boil and simmer until tortellini are done.

    Serve with Parmesan cheese. Makes 4 servings.
