Tuna "Un" Casserole

1 teaspoon olive oil
6 ounces tuna, canned -- drained well
1 stalk celery -- finely diced
2-3 tablespoons onion -- finely diced
2 ounces heavy cream
1 tablespoon water
handful of shredded cheddar cheese, salt,
and pepper to taste
In a non-stick skillet, sautee onion and celery in oil until just barely soft(3-4
minutes). Add cream and water and warm through, then add tuna and warm
through again.
Season and add cheese -stir and continue to cook until cheese is melted.
If you wanted this a little tangier, add just about 1tsp Dijon mustard with the
cream. For a slightly richer taste, add 1T softened cream cheese or mayonnaise
with the cream.
