    Microwave New Mexican Quiche


    List of Ingredients


    • 9 strips bacon, cooked and crumbled
    • 2 cups grated Monterey Jack cheese
    • 4oz can chopped green chiles
    • 3 green onions thinly sliced
    • 1 baked 9" pie crust
    • 1 13oz can evaporated milk
    • 4 eggs


    Instructions


    1. Combine first 4 ingredients and toss lightly. Sprinkle about 3/4 of mixture over pie shell. Heat milk in a measuring cup on high 2 1/2 minutes. Beat eggs in seperate bowl. Add hot milk and beat again. Pour evenly into pie shell. Sprinkle with remaining bacon mixture. Cook at 60% power 12-15 minutes until center is set. Let stand 5 minutes before cutting into wedges.


    Final Comments


    Ortega canned chili is the closest taste to fresh.
