Microwave New Mexican Quiche
List of Ingredients
- 9 strips bacon, cooked and crumbled
- 2 cups grated Monterey Jack cheese
- 4oz can chopped green chiles
- 3 green onions thinly sliced
- 1 baked 9" pie crust
- 1 13oz can evaporated milk
- 4 eggs
Instructions
- Combine first 4 ingredients and toss lightly. Sprinkle about 3/4 of mixture over pie shell. Heat milk in a measuring cup on high 2 1/2 minutes. Beat eggs in seperate bowl. Add hot milk and beat again. Pour evenly into pie shell. Sprinkle with remaining bacon mixture. Cook at 60% power 12-15 minutes until center is set. Let stand 5 minutes before cutting into wedges.
