    Santa Fe Salad


    List of Ingredients


    • 2 15oz cans whole kernal corn, drained
    • 2 15oz cans black beans, rinced and drained
    • 1 10oz can Rotel tomatoes, undrained
    • 3/4 cup sliced green onions
    • 1/3 cup olive oil
    • 1/3 cup lime juice
    • 1T minced cilantro
    • 1t salt
    • 1t ground cumin


    Instructions


    1. In large bowl, combine corn, beans, tomatoes and onions. In a small bowl combine other ingredients; add to corn mixture and mix well. Cover and refrigerate for at least 2 hours. Serve with slotted spoon. 8-10 servings
