Santa Fe Salad
List of Ingredients
- 2 15oz cans whole kernal corn, drained
- 2 15oz cans black beans, rinced and drained
- 1 10oz can Rotel tomatoes, undrained
- 3/4 cup sliced green onions
- 1/3 cup olive oil
- 1/3 cup lime juice
- 1T minced cilantro
- 1t salt
- 1t ground cumin
Instructions
- In large bowl, combine corn, beans, tomatoes and onions. In a small bowl combine other ingredients; add to corn mixture and mix well. Cover and refrigerate for at least 2 hours. Serve with slotted spoon. 8-10 servings
