List of Ingredients
3 tbsp olive oil
2 onions, chopped
3 garlic cloves, crushed
2 green peppers, seeded and chopped
1 fresh red chili, seeded and finely chopped
675 g or 1.5 lb lean minced beef
4 tomatoes, skinned and chopped
1 bay leaf
75g or 3 oz raisins
75g or 3 ozx pimiento-stuffed green olives, slived
1/2 tsp ground cumin
1 tbsp vinegar
3 tbsp capers
salt and freshly ground pepper
Recipe
Heat the oil in a large, deep frying pan and add the onions, garlic and peppers. Fry gently until softened and lightly colored. Add the chili and fry for 1 minute. Stir in the minced beef and cook, stirring constantly, until evenly browned.
Add the tomatoes, bay leaf, raisins, olives, cumin and vinegar. Simmer gently for 20 minutes until the meat is cooked and the sauce thickens. Stir in the capers and season to taste with salt and pepper. Simmer for 5 more minutes.
Serve with plantains,rice and fried egg for Arroz a la Cubana.
