Garlic Chicken

Marinade:
1 t. Rice wine vinegar
1 egg white
1/4 t. salt
1 T. Sesame oil
1 LB chicken breasts
1/2 c. vegetable oil
1 t. cornstarch
3 T. chicken broth
1/2 c. water
1/2 c. chopped garlic
Soy Sauce to taste
1 t. sugar
1/3 c. water chestnuts
matchstick carrots
1 t. sesame oil
Recipe
Chop chicken into chunks. Mix merinade. Add chicken and let stand for 20 minutes.
Heat 1/2 c. vegetable oil in wok on med heat. Add chicken & stir fry until almost cooked. Remove & drain all but 4 T. oil.
Dissolve cornstarch in water. Add chicken, garlic,water chestnuts,& carrots to hot oil in wok. Stir fry 3-4 minutes. Add sugar, soy sauce,& water. Cook on low heat. Add cornstarch paste & stir in sesame oil. Serve over rice
