Rub inside and outside of chicken with salt and ginger juice. Stuff with lemon grass and ginger (inside). Line steamer with foil (so sauce won’t drip) then steam chicken till tender. Let it cool then brush with sesame oil.
After one hour brush chicken with oyster sauce and slice.
Heat drippings and put peeled cucumber (half cooked) tomatoes (till skin starts to peel off; peel off skin) and onion leaves cut into 1 inch long, remove them and continue boiling drippings till it thickens.
Sauce: ½ chicken cube, ½ of drippings, 3 tbsp. Ginger juice, sesame oil, oyster sauce, little soy sauce; bring to a boil.
Rice: Hot sauce, lemon juice, red pepper, soy sauce, remaining ½ of drippings, chicken cube. Liquid should be 1 cup more than the rice.
