    1.5 lb small new potatoes
    5 T olive oil
    2 garlic cloves, sliced
    1/2 t crushed chilies
    1/2 t ground cumin
    2 t paprika
    2 T red or white wine vinegar
    1 red/green pepper, seeded and sliced
    coarse sea salt, to serve , optional

    Recipe



    Cook the potatoes in boiling salted water until almost tender. Drain and, if preferred, peel them. Cut into chunks.

    Heat the oil in a large frying pan and fry the potatoes turning them frequently until golden.

    Meanwhile crush the garlic, chillies and cumin using a pestle and mortar. Mix with the paprika and wine vinegar.

    Add the garlic mixture to the potatoes with the sliced pepper and cook, stirring, for 2 minutes. Serve warm, or leave until cold. Scatter with coarse sea salt, if you like, to serve.
