Tomato & mushroom cream sauce

Serves 4.
List of Ingredients
- 1/2 an onion
- 3 garlic cloves
- Pint - pint 1/2 of double cream
- Teaspoon of tomato puree
- 1Cup of tomato juice
- 4- 6 chopped tomatoes
- 10 quartered mushrooms
- Knob of butter
- Season
Instructions
- In a pan, melt the butter.
- Add the chopped onion, garlic, tomatoes, mushrooms.
- Stir for 1 minute.
- Mix with the tom puree, tomato juice. Simmer for a few minutes.
- Season & add the cream.
- Bring to the boil, simmer gently & reduce. Season to taste.
Final Comments
Serve over a salmon steak with potatoes & veggies.
