    Serves 4.


    List of Ingredients


    • 1/2 an onion
    • 3 garlic cloves
    • Pint - pint 1/2 of double cream
    • Teaspoon of tomato puree
    • 1Cup of tomato juice
    • 4- 6 chopped tomatoes
    • 10 quartered mushrooms
    • Knob of butter
    • Season


    Instructions


    1. In a pan, melt the butter.
    2. Add the chopped onion, garlic, tomatoes, mushrooms.
    3. Stir for 1 minute.
    4. Mix with the tom puree, tomato juice. Simmer for a few minutes.
    5. Season & add the cream.
    6. Bring to the boil, simmer gently & reduce. Season to taste.


    Final Comments


    Serve over a salmon steak with potatoes & veggies.
